Dave Gray is the founder and owner of Uncle Stan’s — a 100% Indigenous-owned jam producer based in Coffs Harbour, New South Wales. His culinary journey began as a chef at the renowned Meat & Wine Co. Sydney, where he started in 2003. Dave was instrumental in launching restaurants in Israel and Melbourne. His career also took him to Kingsleys Steakhouse, La Grillade and CinCin in Vancouver, where he mastered the art of jam-making under the guidance of acclaimed chef Thierry Busset.
A passionate advocate for sustainability, Dave focuses on reducing food waste and bolstering food manufacturing in Australia, working with local partners like OzGroup and King Tide Brewing to perfect his signature blueberry jam with more flavours to come.
